Romagna is a region that excels in charcuterie that can satisfy even the most refined palates, and one of its most outstanding products is Salsiccia Passita, a traditional sausage made from the heavyweight Italian pig. 
The first step in the production of Primizia is the selection of the pork cuts – shoulder and belly – which are seasoned with salt, pepper, fresh garlic and wine.
